It is 1 pm and I’m sitting at my favorite place in Amman to chill out and have a sip of tea (I’ll tell you about it later) and just thinking what should I have for lunch? I bet most of you wonder the same thing around this time of the day. In Amman, lunch is the main meal and the weather at the moment is quite cold, only one dish comes to mind “Irish Stew”.
This dish can warm you from the very depth of your bone marrow and flow the heat all through your body. It is very easy to make but the taste will stick with you for a while, this time as I promised I will definitely put the recipe in. Here we go:
1/2 Kilo of beef cubes
2 Medium Sized Onions
1 Packet Of Fresh Mushrooms
2 Cubes Of Vegetable Stock
Salt and Pepper to your liking
This dish varies as much as you want it to as long as you use hues of yellow and orange, in other words, do not use greens. You can substitute the beef with lamb if your prefer that and you can add red wine to the sauce to make it even richer.
You start off with heating a pan and adding a little brush of oil tossing the meat in and flipping it on all sides (It’s a trick to seal juiciness inside) then take them to a paper towel to take excess oil off. Now you need a deep pot heat up add a dash of oil, get your onions and chop them thick and chunky. As the onions start cooking in the oil, you peel and chop your potatoes, carrots and mushrooms adding them as you go on. After a few min when the onions start going golden you add your meat, fill the pot with water till all ingredients are covered. Leave them to simmer then start adding the vegetable stock (wine if you please), sprinkle some pepper and salt to your liking. When you feel the veggies are done, get a spoon of flour and stir it into a cold glass of water (if it’s hot it won’t mix) and add it to your pot to watch the sauce get thicker, which makes the whole difference in this delicious wintery creation.
You can serve this with thick wholewheat, rye or multi grain bread. It tastes amazing and as I said warms your heart.
