Banana Muffin Trial, All Rise!

Sitting in bed feeling redundant, decided to make myself useful and make something sweet for the family to enjoy in this snowy weather. Surfed the net for a while and my eyes wandered towards a few recipes for “Banana Muffins”, I have always wondered if these can be made nicely from scratch. I grabbed a few pointers and went along as it goes on.

3 Medium Sized Bananas

2 Cup Flour

2 tsp Baking Powder

3/4 Cup Granulated Sugar

3 tbsp Brown Sugar

1 Egg

1 tsp Cinnamon

1 tsp Nutmeg

1/2 tsp Salt

40 grams Butter Finger

I mashed up the bananas and added the egg and brown sugar to that along with the melted butter. Mixed them up well and got my cupcake holders ready in their baking pan.

I had the flour, granulated sugar, baking powder along with the cinnamon and nutmeg mixed then added them to the banana mixture. Do not mix it with a blender this is a thick blend by folding type (the mixture is slowly mixed using a spatula by folding the ingredients in with out losing the bubbles previously achieved).

Final Mixture

Now with a spoon take the mix into the cupcake holders and it should fill up 10 muffin cases or 11. Put them in the oven for 20 minuets at 180 degrees  you can watch them rise and golden on top, use the usual test of the toothpick to know when they are ready.
