Some one asked me a while ago to add Arabic recipes to my blog, I thought of many to add in order to introduce the world to our cuisine, but in the end I felt I should start simple and delicious. As a child I always came back home to find a stew cooking or some sort of casserole with rice on the side, growing older I figured I can add my own signature to these dishes. Today’s choice is Chicken & Vegetables, the ingredients are usually available in every house (unless you are a student/bachelor living abroad):

-6 Chicken Thighs (You can use 2 boneless chicken breast cubed if you prefer)

– 1 Potatoe (Medium Cubes)

– 2 Carrots (Medium Cubes)

– Handful Of Green Beans (Chopped)

– 3 Squashs (Medium Cubes)

– Small Broccoli

– 3 Tomatoes (Chopped)

– Garlic (Chopped Fine)

– 2 or 3 tbsp Tomato Paste (Depends on your taste in sauce thickness)

– Oregano (Optional)

– Olive oil

–  1 Cube Vegetable Stock

– Ground Chilli (Optional)

– Salt & Pepper

It is amazing the moment you add a dash of oil to the pot and drop these pieces of garlic, the smell that fills the air makes you extremely hungry, soon as that scent arises add your chicken thighs and lower the heat. Do not toss your chicken around as soon as you put it in the pan let it cook on one side a little then it’s easier to move it around. Add your potatoes and carrots to the mix, then your other vegetables and saute them on medium heat, cover the mixture with water and let the pot  boil. Lower the heat and let it simmer, slowly adding the vegetable stock cube, tomato paste and oregano. After a  while check your potatoes and see if they are cooked, taste your sauce and add salt and pepper to your liking.

Found this on the internet and serving this way sure looks elegant.

White rice makes a great companion to this dish, and to make it look perfect for serving I usually use this trick, put rice in a small bowl you have try to just put a little bit of pressure then invert it on to the plate before your add the sauce on the side. Sometimes we look for the impressive dish to serve but this is a simple dish, a home made meal, a delicious, nutritious and full of love one that everyone tends to enjoy.
